This blend of selected Arabicas is roasted slowly, in the French tradition, for a cup that is deep, strong, and smooth, without the bitterness, leaving a caramelized splendor on the palate.
Although it is roasted dark, Jeremiah feels strongly that one should be able to taste the characteristics of each origin used in blending this coffee. The French Roast style originated in Southern France for various reasons. High quality coffee was hard to come by and it was easier to hide the flaws of lower grade coffee when roasting it dark. French food is fairly rich in flavor and spice which allows for a robust pairing of a French Roast style coffee. Many coffee companies today still hide lower grade coffees in their French Roast.
